Recipe for Creamy Crawfish Sauce - Serves 6 to 8
Ingredients:
8 tablespoons butter
1 bunch green onions cleaned and chopped
1 half pint of half-n-half
2 tablespoon Einkorn Flour
1/2 cup parmesan cheese
chicken broth (as much as needed)
1/2 cup white wine
1 tablespoon dry parsley
1 pkg frozen crawfish tails - clean this with cold water before using
1 level tablespoon cajun seasoning, careful this is salty
1 tsp garlic powder
black pepper
Directions:
1. Melt butter in large skillet.
2. Saute' green chopped green onions until softened.
3. Add flour and make a roux.
4. Add half-n-half and wine to thin out roux.
5. Add rest of ingredients. Saving crawfish for last. Cook until smooth and creamy. Serve. If it is too thick add chicken broth. If too thin, let cook longer until it thickens.
You will be a rock star with this recipe. In the winter I make it an add more cream and chicken broth and make into crawfish bisque. Yeah that's the ticket.
